Chicken Tacos in the Instant Pot

This is one of those meals that turns into a "choose your own adventure".  Each of us have it a little differently.  The chicken can be a filling to a burrito, taco or topped on a salad.  Generally with something like this for dinner - we have each of the options already on hand and the kids can pick what they want to do.  The win for me is that when the kids are part of the process of picking how it ends up on their plate - they eat more.


Let's Get Crafty!

Toss everything in the Instant Pot:

3 chicken breasts, thawed
1 onion, sliced
2 peppers, sliced
2 tablespoons taco seasoning mix
1/2 can low sodium chicken broth

Lock the lid.  Set to manual and adjust the time up or down to get to 25 minutes.
