Deconstructed Tamale Pie

So... what does this mean?  It means that we have a little one that doesn't like it when Mom cooks at the end of the day.  That means that throwing together a tamale pie is a hard sell.  If you do have the time - I highly recommend the recipe in this link Tamale Pie.  

On this day - I made some boxed cornbread and we topped it with the things that would generally go along with a tamale pie and it was great.  Everyone loved it and requested that it be put in their cookbooks! That is a win in my book!

Let's Get Crafty!

Preheat oven to 400 degrees.

We used two boxes of the Jiffy cornbread mix and cooked it as follows:

Baked cornbread for 17 minutes and used two boxes with 2/3 cup milk and 2 eggs

Cook up your taco meat like you normally do for tacos and then each person can layer up their "tamale pie".  What I did is pictured above. Connor did extra cheese with no olives or tomatoes.  Emily did no cheese and no olives with extra tomatoes.  Haley did... All. The. Things. along with extra sliced olives in the end.
