Fresh Salsa

I love the fresh ingredients that start pouring from our gardens this time of year.  Let the healthy feasting begin!  Today I have a fresh salsa recipe to share that feels extra special because the tomatoes come from Mark’s Uncle Roger’s garden.  His garden is truly beautiful and tomatoes are definitely flourishing.

We were able to use jalapenos from our garden.  These were the first couple that were ready.  It feels so fun to go outside and pick from your garden to take inside and put right into a dish.  I think that’s why I’ve always loved herb gardens.  Speaking of – the parsley came from our herb garden too.


Let’s Get Crafty!
2 lbs tomatoes, small diced with some juice and seeds removed
2 medium sized jalapenos, small diced with seeds removed
½ small onion, super small diced*
1 tablespoon parsley, chopped
Juice of one lime (approximately 2 tablespoons)
Splash of red wine vinegar (maybe one teaspoon)
Salt and pepper to taste

* The “super small” cut is because I’m not a fan of uncooked onion but a salsa recipe truly needs to have that bite of flavor and even I miss it without it.  If you love onions then you should definitely add more.

Be sure to allow yourself plenty of time for this to chill in the fridge before serving.  That makes the difference in the flavors coming together.
