I'm going to kick off the recipes with the 3 chicken meals included in the set of 10 recipes. My favorite of the three is the zesty chicken.
Chicken breasts can be tricky in Crock-Pot recipes because they can end up way over-cooked and well... let's be honest... Mushy. Who wants mushy chicken for dinner? Anyone? No. Not me either.
Here's a couple options to combat that predicament:

Here's a couple options to combat that predicament:
- As I mentioned in yesterday's post of tips and tricks - I like to cook some of my recipes straight from the freezer into the Crock-Pot. Chicken recipes definitely fall into this category. Because it's still frozen the additional time is needed to complete the cooking process. This helps.
- Another option for these particular recipes could be to defrost them in the fridge and cook them in the oven or on the stove the night of the meal. This method will take some additional time the night of the meal but should be pretty quick and easy.
- I've been toying with the idea of the Instant Pot and haven't bit the bullet to get one but that could also be another option.
Buffalo Chicken Wraps
Ingredients for the freezer bag:
3-4 chicken breasts
12 ounce bottle of hot sauce (Red’s hot wing sauce)
1/2 package of dry ranch dressing (1 ½
Tablespoon of my Costco pack)
Day of the Meal:
Cook on low for 8 hours
In the last 30 minutes of cooking add 2 tablespoons of butter and
shred chicken.
Serve with tortillas, lettuce and cheese to make the wrap at time
to eat
Ranch Tacos

Ingredients for the freezer bag:
1 packet of ranch seasoning
2 lbs boneless chicken breast
1 can rotel (mild for the kiddos)
¼ c of olive oil
¼ c water
Dump all ingredients except
the meat into a labeled freezer bag, seal and
mix up. Add chicken breast once sauce ingredients are mixed well.
Day of the Meal:
Cook on low for 6-8 hours.
Cook on low for 6-8 hours.
Tortillas, lettuce, cheese and salsa to make the tacos when ready to eat. This would also be good on a salad or as the start of chicken enchiladas.
Zesty Chicken

Ingredients for the freezer bag:
3-4 chicken breasts
1 10oz Can Cream of Chicken Soup
1 Package Cream Cheese cubed
1 Package Zesty Italian Dry Dressing Mix
Dump all ingredients into bag and mix. Done and done!
I made two of these... it's my favorite!
Day of the Meal:
Cook on low 8 hours
Serve with rice or noodles and a side salad
*Sauce Tip* At the end of the day when we it's ready to serve- take the chicken out and give the sauce a good whisk. Put the chicken back in the Crock-Pot and now the sauce is good if you want to break up the meat in the Crock-Pot to serve over the rice or put a piece on your plate and use a spoon to drizzle the sauce over the top.
