Cinnamon Swirl Banana Muffins

We had some super ripe bananas to use up and I was looking to try something new for breakfast.  These were pretty good.  Next time I would put more of the cinnamon/sugar swirl in the middle layer and on top. There was plenty leftover and I wish we could have seen the swirl layer in the middle clearer.  


Let's Get Crafty!

Preheat oven to 350

Ingredients:
3 over ripe bananas, smashed
1/3 cup melted butter
3/4 cup white sugar
1 egg, beaten
1 teaspoon vanilla
1 teaspoon baking soda
1 1/2 cups flour

For the swirl
1/4 cup sugar
1 teaspoon cinnamon

Getting mix together:
2 over ripe bananas, smashed
1/3 cup melted butter
3/4 cup white sugar
1 egg, beaten

Gently add to wet mixture:
1 teaspoon vanilla
1 teaspoon baking soda
1 1/2 cups flour

This made 9 muffins for us.  Spray your tin with non-stick spray and layer in 1/2 banana muffin batter then sprinkle with sugar/cinnamon swirl then the other half of the batter topping it off with a little more sugar/cinnamon swirl.

Layered up and heading in the oven

Bake for 20 mins
