Hash Brown Breakfast Casserole with Sausage

It feels crazy to have another Sunday with no church service.  Especially weird for this to be happening during Lent.  I pray that everyone is staying healthy during this crazy time of social distancing and the kiddos not being in school for an extended period.  I also pray that everyone is practicing self care to help themselves cope with the added stress.  My self care is making food for my family and writing about it.  Here's what we have baking in the oven this morning.

We haven't had a breakfast casserole since Christmas morning!  It felt like we were long overdue and while my husband and Connor are sneaking in some Fortnite time in the basement - I threw this together.


Let's Get Crafty!
Preheat oven to 350 degrees

Brown the sausage (or cook whatever meat you want to use)
1 lb breakfast sausage

Thaw the hash browns some (I did 3 mins on defrost in the microwave)
30 oz frozen hash browns

Whisk together (do this in a large bowl so you can use the same bowl to combine everything together):
9 eggs
1/2 cup half and half
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon pepper
2 cups shredded cheese

Combine everything together and stir gently until well combined: 
Egg mixture, hash browns and sausage


I put 1/3 of this mixture on one side of a 8 x 12 baking dish and then with the other 2/3 in the mixing bowl I added green chiles, green onions and diced orange pepper.


Bake around 60 mins - uncovered (I start checking mine around 45-50 minutes... and I'll probably be adding some extra cheese... because cheese is delicious.)
