Hot Fudge Cake

When I was a little girl, we would go out to eat at a buffet called King's Table. My Uncle Jay and Grandpa Bob used to call it the Fork and Spoon.  That makes me smile just thinking about it.

They had a dessert that was part chocolate cake and part ooey gooey chocolaty deliciousness.  This recipe reminds me of that.  I'm not sure what got me reminiscing about that but then I really wanted to make it.  I remember when we would go out to eat that my brothers and others seemed to be excited to put a scoop of vanilla ice cream on top.  I'm not really a fan of ice cream and think it is quite tasty just like this.  


Let's Get Crafty!

Preheat the oven to 350

Ingredients:
1 cup all-purpose flour
3/4 cup sugar
6 tablespoons cocoa (divided)
2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons vegetable oil
1 teaspoon vanilla
1 cup packed brown sugar
1 3/4 cup hot water

Combine the dry ingredients: flour, sugar, 2 T cocoa, baking powder and salt

Then stir in the milk, vegetable oil and vanilla until smooth like the picture below


Spread into a greased 9x13 baking pan


Combine brown sugar and 4 T cocoa and sprinkle over the top of the batter


Pour the hot water over all - DO NOT STIR


Bake for 30-35 minutes (it was 30 minutes for us)
You will want to keep an eye on it to make sure it doesn't overcook

Sprite Biscuits

We had these last night and they were so good.  My son's exact words were "10 out of 10."  They are so light and fluffy.  Many recipes you find call these 3 ingredients biscuits... but technically there are four.  

Let's Get Crafty!

Preheat oven to 450

Ingredients
2 cups bisquick
1/2 cup sour cream (we used light)
1/2 cup sprite
1/4 cup butter, melted (we used unsalted)

Combine the first three ingredients until just combined


Sprinkle some bisquick on the counter, put the dough ball on the counter and kneed it some just until softened.  Ours was still sticky so I added some more bisquick.  (Not a lot - maybe 1/8th of a cup.)

Spread out the dough and cut out small circles with a cookie cutter or jar.  We ended up with 13. (None were leftover and I'm guessing we'll be making these again very soon.)


Put the melted butter in the bottom of the pan you want to bake them in.

Put the biscuits on top of the butter and bake for 12-14 minutes.


I added a little bit of butter to the top of each as they came out of the oven.

Tater Tot Breakfast Casserole

The tater tot base in this recipe gives this breakfast casserole a little something extra.  I have seen many recipes floating around similar to this.  This is a spin off the one from Ree Drummond's cookbook The New Frontier page 42.  We are using green onions instead of yellow onion here, excluding the cayenne pepper, using less peppers and changing up the cheese situation.

Preheat the oven to 350

Ingredients:
1 pound breakfast sausage, cooked
2 green onions, diced
4 large eggs 
1 cup 2% milk
1/2 cup half and half
1/4 teaspoon seasoned salt
1 diced red pepper (we used several of the small peppers that come in a yellow, red, orange variety)
2 cups grated cheddar cheese
1 cup mozzarella cheese

The following pictures give the step by step playbook of how I layered the casserole




For this layer: Whisk the eggs, milk, half & half and seasoning salt 
together and pour over the top.

One final layer of cheese.  Because... well... cheese.

Bake covered at 350 for 30 minutes
Remove the foil and bake uncovered for another 25 minutes


Yummy!  You know mine needed some green chile.  ;)

Loaded Potato Dip

Brace yourself to fall in love with this tasty dip.  If you love loaded baked potatoes - you are going to love this!  You won't want to add extra salt to this because the saltiness of the potato chip does the work.  While I'm thinking about it - you will want to get the ruffled chips to be able to stand up to scooping.  

When Mark and I made this for the first time - we each tasted it and then just looked at each other.  It doesn't make sense how something so easy can taste as amazing as it does.

Ingredients:
1 cup sour cream
1 cup shredded cheddar cheese
10 slices of bacon, crumbled
3 green onions, sliced

I like to mix everything together except the green onion and sprinkle those on the top for some fun color and to give just a hint of green onion flavor, but you could absolutely mix it all together.
